Nice peach coffee cake that reminds me a lot of whole fruit version of my grandmas applesauce cakes.

Recipe Ingredients for Rustic Peach Cake

1/2 c. all-purpose flour
1/2 c. whole wheat flour
1 tsp. baking powder
1/4 tsp. sea salt
1/4 c. granulated sugar
1/4 c. Brown sugar
8 T. unsalted butter
2 eggs
2 T. light sour cream
1 teaspoon vanilla extract
1/3 cup dried apricots
2 peaches

Recipe Directions for Rustic Peach Cake

  1. preheat oven to 350. cream butter and sugar on med till fluffy, in mixer. Add vanilla and eggs, and sour cream. Then add dry ingredients until mixed. (except for the fruit) spread batter in a 9" greased springform pan. sprinkle w/dried fruit. Top w/slices of peaches and cinnamon.

  2. Bake until golden brown on top and set in the center. appx. 35 -40 min.
