Recipe Ingredients for Rustic Peach Cake

1/4 cup granulated sugar
1/4 teaspoon ground cinnamon
2 medium peaches, peeled, pitted and each cut into 8 pieces
1 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup granulated sugar
1/4 cup light brown sugar
8 tablespoons unsalted butter
2 large eggs
2 tablespoons sour cream
1 teaspoon vanilla extract
1/3 cup dried apricots, chopped fine

Recipe Directions for Rustic Peach Cake

  1. Preheat oven to 350 degrees.

  2. Grease 9 inch springform pan.

  3. Combine sugar and cinnamon. Reserve 2 tablespoons sugar mixture.

  4. Add peaches to remaining sugar mixture and toss to coat.

  5. Whisk flour, baking powder and salt.

  6. With mixer, beat sugars and butter for about 2 minutes.

  7. Beat in eggs, sour cream and vanilla.

  8. Reduce speed and mix in flour mixture for 30 seconds.

  9. Scrape batter into pan.

  10. Scatter dried apricots over batter and then arrange sugared peaches in circular pattern. Reserve 3 slices for the middle.

  11. Sprinkle reserved sugar mixture over peaches.

  12. Bake until golden brown, 35 to 45 mins.
