Serves 6 as a dinner accompanied by salad, but could be cut into smaller portions for a lunch. Great summer or winter.

Recipe Ingredients for Rustic Courgette and Ricotta Tart

2 tbsp olive oil
3 courgettes, thinly sliced and griddled
500 g ricotta cheese
4 eggs
1 tbsp basil
1/2 tsp nutmeg
50 g parmesan
1 garlic clove, crushed
500 g puff pastry
2 tbsp pine nuts

Recipe Directions for Rustic Courgette and Ricotta Tart

  1. Preheat the oven to 200 degrees.

  2. Heat half the olive oil in a griddle pan. Fry the courgettes until they turn golden. Remove from heat and set aside.

  3. Mix together the ricotta, eggs, basil, nutmeg, garlic and half the parmesan.

  4. Dust a flat surface with flour and roll out the pastry until it is about 0.5cm thick. Spread the ricotta mixture over the pastry leaving a 4cm border around the outside so the bare pastry can rise. Sprinkle over the remaining parmesan and the pine nuts.

  5. Cook for 30mins or until the pastry is golden. Delicious hot or cold.
