Recipe Ingredients for Rustic Butternut Squash Soup

1 pound butternut squash, roasted
1/2 c canned tomatoes
1 clove garlic
1/2 c onion, chopped
2 oz parmesan cheese
2 tsp maple syrup
1/2 t salt
1 slice whole grain bread (preferably stale)
1/4 c whole milk
1 1/2 c water
2 tsp olive oil

Recipe Directions for Rustic Butternut Squash Soup

  1. chop the bread slice into fine pieces and toast on a pan until good and crisp

  2. sautee garlic and onions in oil until onions soften

  3. add tomatoes and crush a little

  4. add parmesan rind to the mix and stir

  5. add water, thyme, and a generous helping of sage

  6. add peeled roasted butternut squash and crush until smooth. it won't look "perfect" but all the chunks should break up

  7. add maple syrup and more water if needed

  8. bring to a boil

  9. add whole milk

  10. bring up to temp, then serve with "croutons" on top
