A lovely winter soup - delicious!

Recipe Ingredients for Russian Vegetable Soup

25 g butter
1 onion
450 g potatoes
220 g parsnips
220 g carrots
100 g cabbage
2 tablespoon parsley
1/2 teaspoon nutmeg, grated
2 litres water
1 salt and pepper

Recipe Directions for Russian Vegetable Soup

  1. Sweat the chopped vegetables in the butter for 10 minutes.

  2. Add all the other ingredients, then simmer for 30 minutes (add a vegetable stock cube or a couple of spoons of vegetable bouillon if required).

  3. Cool then liquidise.
