Recipe Ingredients for Russian herring salad, modified

1/2 medium onion, sliced mixed with 1 tsp vinegar and soaked in hot water for 20 min
1 medium potato
100 g beets
1 small carrot
3 1/2 oz Herring, Atlantic, Kippered
1 hard boiled egg
1 dash salt
1/4 tsp dry dill
3 tbsp yogurt
1 tbsp mayonnaise

Recipe Directions for Russian herring salad, modified

  1. Place beet in a medium pan, cover with water. 10 min. after the water starts boiling add potato. In another 5 min. add carrot and continue to cook another 10 min. This way you will have cooked, but still firm vegetables. Let cool until you can handle them and peel.

  2. Shred cooked vegetables and egg into a medium bowl (or if you prefer you can dice them).

  3. Mix yogurt and mayonnaise in a cup and add it to the vegetables along with fish (original recipe calls for salted fish, you can use it if you have it), dill and salt.

  4. Carefully mix all ingredients. Cover with plastic wrap and place in the refrigerator for at least an hour, better overnight.
