Russian Eggplant Appetizer - very easy to make - just throw in a pot, and cook.

Recipe Ingredients for Russian Eggplant Appetizer

3 cups eggplant, diced
1 1/2 cups green pepper, diced
1 1/2 cups onion, diced
1/3 lb canned crushed tomatoes
3 tbsp vegetable oil
1/4 cup red wine vinegar
1/3 cup water
1 tsp salt
1 black pepper

Recipe Directions for Russian Eggplant Appetizer

Once all the vegetables are chopped, place in pot, and pour oil and vinegar and water over them. Bring to a boil, and cook on medium heat for 30 minutes.
