Recipe Ingredients for Russian Cabbage Rolls

2 cabbage heads, medium
1 7/10 lbs ground beef, 15% fat
2 medium onions
200 g rice
2 carrots, large
300 ml heavy whipping cream
250 g crushed tomatoes
1/2 cup cilantro, chopped
2 tsp garlic, minced
2 tbsp flour
1 tbsp olive oil
2 cups water
1 tbsp salt
2 tsp ground black pepper

Recipe Directions for Russian Cabbage Rolls

  1. Chop both onions very finely, add half of it to the meat. Shred or chop carrots, set aside.

  2. Place the cabbage heads in a large pot with boiling water - make sure that water covers them completely - and cook for ~3 min. Remove from the pot, drain, set aside.

  3. Prepare the rice: in a medium saucepan boil rice for ~10 min or until almost done. Drain, flush with cold water and set aside.

  4. In a large bowl, combine meat, rice, 1 cup warm water, flour, 1 tsp garlic, 1/4 cup cilantro, 1/2 tbsp salt, pepper. Mix all ingredients very well together, the stuffing should be uniform and elastic.

  5. Place ~1.5 tbsp of stuffing on the bottom of the softened cabbage leave and form a roll, repeat until all stuffing is gone.

  6. On a med-high flame warm a large skillet, spray with non-fat cooking spray and place as many rolls as will fit into the pan. Brown the rolls for ~2-3 mins on each side and place them into casserole dish.

  7. Make the sauce: saute the remaining onions with olive oil until golden brown, add carrots, cook until tender, add garlic. Add cream and bring to a boil, add tomatoes, cover the pan with lid and let the sauce simmer until thickened for ~10 min, add remaining cilantro. Cover the rolls with sauce and bake in the preheated oven at 375-400F for ~ 20 min or until the meat is done. Serve with a scoop of sour cream.
