Homemade healthy low fat granola bar with high protein content for easy out the door in a hurry meals.

Recipe Ingredients for On the Run Granola Bar

2 cups rolled oats
2 cups Kashi Golean
1/2 cup sunflower seeds
1 cup chopped almonds
3/4 cup raisins
3/4 cup flaked coconut
3/4 cup natural soy protein powder
3/4 cup milled flaxseed
2 tbsp. toasted wheat germ
2 tbsp. cinnamon
1 tbsp grated nutmeg
1 tbsp turmeric
3/4 cup honey
1/2 cup butter
4 eggs, slightly beaten
2 cups plain yogurt

Recipe Directions for On the Run Granola Bar

  1. Spread oats on a baking sheet and toast in a 400 degree oven for about 10 minutes. Be sure to stir them every few minutes to avoid burning. Turn down the oven to 350F. after oats are finished toasting. Line a cookie sheet dish with parchment paper. Once oats are done toasting, put them into 8 cup measuring pitcher. Add rest of dry ingredients to oats, and stir to mix. In a 4 cup measure, add the honey and butter and MW for 30 sec. or until butter is melted. Add eggs and yogurt to the melted butter and honey mixture and stir together. Add to dry ingredients and mix all ingredients until everything is moistened.

  2. Spread the granola mixture out into the bottom of the prepared cookie sheet. Bake for 15 to 20 min, or until barely browned.

  3. Carefully transfer granola onto a large cutting board and cut using a pizza wheel. Store in an air-tight container.

  4. *Amounts can be approximate, and other nuts or dry fruits substituted, so long as total dry ingredients are 8 cups.
