Great Aunt Ruby's Classic Cucumber Canape mad Low Fat

Recipe Ingredients for Ruby's Cucumber Sandwiches - 25 Calories each

16 ounce reduced fat cream cheese
2 tbs. light mayonnaise
1/2 medium onion, minced
4 english cucumbers, thinly sliced
26 slice sara lee light sandwich bread

Recipe Directions for Ruby's Cucumber Sandwiches - 25 Calories each

  1. Slice cucumbers thinly - 1/8 to 1/4 thick, as desired.

  2. Trim crusts from bread.

  3. Combine softened cream cheese, mayonnaise and onion.

  4. Lightly toast the bread (or not), cool, spread the cream cheese mixture, cut the slices into 4 and add a piece of cucumber. The toasts can also be cut into 4 in advance, or rounds, etc., and cheese mixture spread on each piece individually and then cucumber added (more work, nicer presentation).

  5. Garnish as desired - Gravlax, Dill Weed, Ahi Tuna, Parsely, etc. (Garnis not included in the calorie count.

  6. Layer in wax paper and store in the refrigerator.
