A beautiful warm, and spicy soup. Very filling.

Recipe Ingredients for ruby soup

4 beets (2" dia, sphere) Beets
0.5 onion Yellow Onion
5 clove Garlic
2 medium apple Apples
2 squash (4 inch dia) Squash, Winter, Acorn
4 stalk, medium (7-1/2" - 8" long) Celery
6 oz Peeled Mini Carrots
2 serving Sunflower Oil
6 cup Organic Vegetable Broth
6 serving Ground Ginger Spice
3 tsp Nutmeg, Ground
3 tsp Spices Ground Coriander
1 serving Coconut Milk
2 cup Reduced Fat Feta Traditional Crumbled

Recipe Directions for ruby soup

  1. Heat oil in skillet on medium.

  2. Chop onion, garlic, and celery and saute for a few minutes.

  3. Add spices to taste.

  4. Peel and chop acorn squash, beets, carrots, and core and dice the apples.

  5. Add to pan and let saute for a few minutes.

  6. Pour in 4 cups of veggie broth and let simmer on high for 15 minutes.

  7. Puree in a blender, adding the final 2 cups of broth.

  8. Serve with feta and a swirl of cocnut milk.
