I'm assuming you're going to smoke these, but I'll include baking instructions as well.

Recipe Ingredients for Rubbed Ribs

2 lbs Pork, Fresh, Spareribs
2 tbl yellow mustard
2 tbl paprika
2 tbl light brown sugar
2 tsp kosher salt
2 tsp chili powder
1 tsp black pepper
1 tsp cumin
1 tsp granulated garlic
1 tsp onion powder

Recipe Directions for Rubbed Ribs

  1. Note: 2 lbs is kind of a swag. I was figuring one rack is about 2 lbs. Half a rack is a serving.

  2. Combine all powders and brown sugar for the rub.

  3. Trim the membrane from the "bone" side of the ribs. If you don't know how to do this, Google "rib membrane" and you'll get plenty of "How-To" video results.

  4. Rub 1/2 of the mustard on one side of the ribs.

  5. Coat side with 1/2 of the rub.

  6. Repeat on the other side.

  7. Cook for three hours in a 225 - 250 degree smoker.

  8. Foil the rack, add a little apple juice to the foil, and put back on smoker for another hour.

  9. Remove from foil, put back on smoker for one final hour If you must sauce your ribs on the cooker, do so now. However, I don't sauce my ribs until I serve them. I think you'll find you'll have better results this way as well.

  10. Remove from cooker and let rest for about 10 minutes before serving.

  11. Note 2: If you're baking, do the exact same as above, but set your oven to 250. Cook the ribs on a baking rack set on a cookie sheet. To get a little smoke flavor in this setting, try using smoked paprika or some chipotle powder. Avoid liquid smoke.
