Swedish pea soup is still considered a national dish, and more, a national tradition. It is said that it has been served every Thursday for centuries, and is often accompanied by crepe-style pankakor with lingonsylt.

Recipe Ingredients for Ärter med Fläsk

1 1/2 c split peas, yellow
2 medium onions, chopped
1/2 tsp ginger
1 tsp marjoram
2 lb fresh pork
1 salt, to taste
1 pepper, to taste

Recipe Directions for Ärter med Fläsk

  1. Pick over and rinse the split peas; put in a small saucepan.

  2. Add 3 qt water and soak overnight.

  3. Set covered saucepan over high heat and bring to a boil quickly.

  4. Remove any shells that are floating on top of the water.

  5. Reduce heat and simmer for about two hours.

  6. Add the pork, onions, and seasonings except salt and pepper.

  7. Cover and simmer gently until the pork and peas are very tender, about another hour. (Peas vary, so check to be sure that they are completely cooked.)

  8. Add salt and pepper to taste.

  9. Remove pork, cut into slices and serve on the side with mustard.
