White Bean Putanesca over julienned zucchini squash

Recipe Ingredients for RST White Bean Putanesca

4 Anchovy fillets, minced
3 cloves Garlic, minced
1/4 tsp Red Pepper Flakes
2 tbs Olive Oil
2 Plum Tomatoes, Roma, Chopped
1 tbs Capers
19 oz Canned White Kidney Beans
1/4 c Basil, fresh, chopped
168 g Turkey Sausage Links , Italian Flavor, chunked
2 c Squash, Zuccinni, julienned
7/8 oz Parmesan Cheese, Grated

Recipe Directions for RST White Bean Putanesca

Saute Anchovy, garlic, red pepper flakes in olive oil for one minute, add tomatoes and cook until softened, 2 minutes, stir in beans (that have been rinsed and drained). Brown sausage until cooked and add to mixture. Add fresh basil, pour over sauteed julienned zucchini. Top with parmesan cheese and serve.
