this is the dairy/egg custard used to make quiche. Traditional Royale would use heavy cream instead of light (half and half) - but that's just too much fat for an otherwise healthy meal. Use veggies, lean meats, low fat cheeses, dried cheeses, herbs etc. to concoct an original quiche. [If you use a lightly greased pan rather than a pie crust -- you are building a fritatta.
