Recipe Ingredients for Roumanian Eggplant Salad

1 1/2 lb eggplant
1 1/2 c chopped onion
3/4 tsp salt
6 tbsp olive oil

Recipe Directions for Roumanian Eggplant Salad

  1. Cut the eggplant into 1" cubes. Salt the cubes lightly, and cook them in a vegetable steamer over boiling water until very soft (10-15 minutes). Transfer to a bowl.

  2. Meanwhile, sauté the onion in olive oil with salt over moderate heat until very soft, but not brown... 10-12 minutes. Stir the cooked onion, plus all its oil, into the eggplant. Mix well, cover, and refrigerate until cold. Good as an hors d'oeuvre on crackers.
