Hearty, Healthy, High Fiber One Dish Meal

Recipe Ingredients for Rotini with Spinach & Beans

13 1/4 oz whole grain pasta
2 tbs low-sodium chicken broth
2 tbs garlic, finely chopped
1 lb spinach, cleaned
16 oz small white beans, undrained
16 oz pink beans, drained and rinsed
3 tbs parmesan cheese, grated
1/2 tsp salt
1/4 tsp crushed red pepper flakes

Recipe Directions for Rotini with Spinach & Beans

  1. Cut the garlic and let rest for 15 minutes.

  2. Cook pasta according to package directions until firm but tender. Drain well.

  3. Meanwhile, heat the chicken broth in large non-stick skillet until it bubbles. Add the garlic and saute until golden - 2-3 minutes - being careful not to overbrown it. Add the spinach and saute stirring frequently about 4 minutes or until wilted. Add the beans, cheese, salt and pepper flakes; cook another 5 minutes or until flavors have blended.

  4. Toss the bean mixture in large serving bowl with hot cooked pasta. Pass with extra grated cheese if desired.
