Recipe Ingredients for Rosemary's Fish Stew

1 1/2 lb Cod
6 oz bacon (salt pork)
2 med onion
1 large potato
4 cups fish stock
1 1/2 cup heavy cream
1 cup white wine

Recipe Directions for Rosemary's Fish Stew

  1. Cut the fish into bite size pieces, set aside

  2. cut the salt pork (thick bacon) into cubes and render in a big pot

  3. remove the crispy pork pieces, leave the fat in the pot

  4. dice the potato and saute in the fat

  5. pour in the milk and the stock & wine

  6. add the fish

  7. cook on medium heat for 10 to 15 minutes or until the fish is done.

  8. add crispy bacon pieces and serve
