Recipe Ingredients for Rosemary Olive-Oil Country Bread

1 1/2 teaspoons active dry yeast
1 cup water
1 cup milk
2 cups all-purpose flour
1 teaspoon active dry yeast
1 cup water
1 tablespoon sea salt
4 cups all-purpose flour
1/4 cup olive oil
2 tablespoons fresh rosemary

Recipe Directions for Rosemary Olive-Oil Country Bread

  1. Heat 1c water & 1c milk and heat to about 100 degrees(F), sprinkle 1 1/2teaspoons yeast over the heated milk and water. Whisk to dissolve; add 2c flour and whisk until smooth and sticky. Cover with plastic or a towel and let sit for 4 HOURS. (Sponge can be stored over night or up to 1 week in the fridge after the four hour sitting)

  2. after sitting (allow to return to room temp if refrigerated) sprinkle 1teaspoon active yeast over sponge, then add 1c room temperature water, add 1 tablespoon fine ground sea salt and 1 cup flour. Beat hard until combined thoroughly. Slowly add remaining flour 1/2 cup at a time until the dough pulls away from the sides of your bowl. Turn dough out onto a lightly floured work surface and knead until elastic but still moist. Place dough in a lightly oiled bowl turning once to coat. Cover with plastic or towel and allow to rise 2 HOURS.

  3. Once risen, punch down with a lightly floured fist and fold in onto itself expelling air. Re-cover and allow to rise for another 45-60 MINUTES

  4. turn dough out onto lightly floured surface. Divide into 3 equal portions. Using as little flour as possible, shape into a tight round loaf. Dust baking pans with flour or corn meal and place dough seam-side down. Cover with plastic and allow to rise 1 1/2-2 HOURS

  5. heat oven to 425 degrees (F) and place loaf (loaves) in oven on pan or directly on a baking stone.

  6. Bake 15 minutes at 425 then decrease your temperature to 375 and bake for another 25-30 minutes until deep golden brown and sounds hollow when taped.
