Thick lentil stew that is wonderful served over brown rice with a sprinkling of goat or feta cheese.

Recipe Ingredients for Rosemary Lentil Stew

2 medium Carrots
1 medium Sweetpotato
1 tsp, crumbled Bay Leaf
1 tsp Rosemary, Dried
1 medium (2-1/2" dia) Onions
3 clove Garlic
1 tbsp Olive Oil

Recipe Directions for Rosemary Lentil Stew

  1. Saute copped onions and garlic. Cook until soft.

  2. Add chopped carrots and sweet potato. Saute for 2 minutes.

  3. Add lentils and 3 cups of water. Add the rosemary and bay leaf.

  4. Cook until lentils and vegetables are soft.
