A tasty side dish that pairs well with roasts. I like using the potato variety from Trader Joe's that includes baby yukon gold, red, and blue potatoes.

Recipe Ingredients for Rosemary and Garlic Roasted Potatoes

2 cups small potatoes
2 T olive oil
2 t fresh rosemary
1 T garlic powder
1/2 t sea salt
1/2 t black pepper

Recipe Directions for Rosemary and Garlic Roasted Potatoes

  1. Cube potatoes into 1"-1 1/2" pieces.

  2. Toss with all ingredients to coat. Transfer to a large baking sheet.

  3. Bake in 425 degree oven for 25-35 minutes until tender.
