Recipe Ingredients for Rosemary-Feta Chicken w Tomatoe Olive Sauce

10 oz chicken breasts
1 slice reduced calorie wheat bread
1 oz feta cheese
1 tbsp rosemary
30 grams olives
3 oz tomatoe
3 cloves garlic
1/3 cup chicken broth

Recipe Directions for Rosemary-Feta Chicken w Tomatoe Olive Sauce

  1. Preheat oven to 375.

  2. Place bread in a food processor; pulse 10 times or until coarse crumbs measure 1/2 cup. Combine breadcrumbs, cheese, and rosemary in a small bowl. Press three cloves of garlic into mixture. Place oilves in a food processor & corsely chop - add to breadcrumbs. Toss well; set aside.

  3. Sprinkle 1/4 teaspoon pepper and salt evenly over chicken. Heat a large nonstick oven safe skillet & lightly spray w Pam. Add chicken; cook 3 to 4 minutes on each side or until browned.

  4. In oven safe skillet; top chicken breasts evenly with breadcrumb mixture, pressing down slightly. Add tomatoes & chicken broth, and sprinkle with remaining 1/4 teaspoon pepper. Bake at 375 for 20 minutes or until chicken is done. Garnish with rosemary, if desired.
