Recipe Ingredients for Rosemary Cream Chicken over Pasta

1 lb boneless skinless chicken breasts, cut into bite size chunks
1 T olive oil
1/2 T balsamic vinegar
1 kosher salt
1 black pepper
8 oz dry pasta of choice ( I like angel hair or spaghetti)
1 T olive oil
1 small onion, minced (or use a shallot)
4 garlic cloves, minced
1/2 cup white wine
1 1/2 cup chicken broth
1/2 cup half and half
1 tsp dried rosemary, crushed (or 3 sprigs fresh rosemary, leaves pulled off and minced)
1/2 tsp cornstarch
1 T half and half

Recipe Directions for Rosemary Cream Chicken over Pasta

  1. Bring large pot of water to boil. Add pasta. Cook according to package directions omitting the oil. Drain and keep warm.

  2. While pasta is cooking start sauce by placing 1 T olive oil in skillet. Heat and add garlic and onion. Cook until aromatic and onion slightly softened.

  3. Add wine and reduce by half. Add chicken broth, half and half, rosemary, and black pepper. Simmer 10-15 min or until starts to thicken.

  4. Make a mixture of cornstarch and 1 T half and half in small cup. Add slowly to sauce until desired consistancy reached. Should be thick enough to stick to pasta.

  5. Prepare chicken by rubbing chicken with balsamic vinegar and black pepper.

  6. Place 1 T olive oil in pan. Add chicken and saute until cooked through.

  7. Add chicken to sauce and cook 4 minutes, for flavors to meld.

  8. Add pasta to chicken and sauce mixture, heat through.

  9. Serve immediatly, salt to taste and garnish with diced tomatoes if desired.
