Recipe Ingredients for Rosemary Chicken and Wild Rice Skillet

6 1/5 oz wild rice, fast cooking long grain (uncle ben's)
25 oz. chicken breast (skinless and boneless)
3 tbsp. flour
2 tsp. rosemary, dried and crushed
1/8 tsp. black pepper
1 tbsp olive oil, divided
1 cup carrots, baby
1 cup chopped onion
2 tsp. minced garlic
1 cup water
14 oz. chicken broth, fat-free, less-sodium
2 cups spinach, coarsely chopped

Recipe Directions for Rosemary Chicken and Wild Rice Skillet

  1. Combine flour, rosemary and pepper in dish. Dredge chicken in mixture.

  2. Heat 2 tsp. oil in large skillet over medium heat. Add chicken to pan; cook 3 to 4 minutes on each side or until lightly browned. Remove chicken from panl set aside.

  3. Heat remaining 1 tsp. oil in pan over medium heat; saute carrots, onion, garlic in hot oil for 2 minutes. Add water and broth; bring to a boil. Stir in rice and seasoning packet; top with chicken. Cover, reduce heat, and simmer 10 minutes or until chicken is done,

  4. Remove from heat, and place chicken on serving paltes. Add spinach to rice mixture, and stir until spinach wilts. Serve chicken with rice mixture.
