Recipe Ingredients for Rosemary Chicken Salad

3 c chicken breast, roasted (about 3/4 lb.)
1/3 c green onions, chopped
1/4 c almonds, smoked, chopped
1/4 c fat-free yogurt, plain
1/4 c light mayonnaise
1 tsp. rosemary, chopped fresh
1 tsp. Dijon mustard
1/8 tsp. salt
1/8 tsp. black pepper, freshly ground
10 slices bread, whole-grain

Recipe Directions for Rosemary Chicken Salad

  1. Cut chicken into a small dice. Combine all ingredients and divide into 5 sandwiches. Add lettuce or cabbage leaf.

  2. Options: Toast bread first if desired or press and make a Panini !
