Slightly modified recipe from Bill Phillips "Eating for Life"

Recipe Ingredients for Rosemary Chicken

3 tbsp balsamic vinegar
1 tbsp olive oil
1 tbsp rosemary
1 garlic clove, minced
8 oz chicken breast
1 tbsp pine nuts, toasted-optional

Recipe Directions for Rosemary Chicken

  1. In a pie plate, mix balsamic vinegar, olive oil, rosemary, and garlic. Add chicken and turn to coat.

  2. Lightly coat a large skillet with cooking spray and place over medium-high heat. Place chicken in skillit and cook for 6 minutes. Turn and cook until no longer pink in the center, about 6 more minutes.

  3. Toast the pine nuts if desired.

  4. Slice chicken and server over couscous if desired top with pine nuts.
