Rosemary and Balsamic Roasted Butternut Squash and Zucchini

Recipe Ingredients for Rosemary and Balsamic Roasted Butternut Squash and Zucchini

2 medium zucchini
6 cups chopped butternut squash
2 tbsp extra virgin olive oil
1 1/2 tbsp balsamic vinegar
1 tsp rosemary, finely chopped
1 kosher salt
1 pepper

Recipe Directions for Rosemary and Balsamic Roasted Butternut Squash and Zucchini

  1. Preheat oven to 400F [200C]. Cut the butternut squash into half and peel it with a knife (do not use peeler, it tough to work with). Cut the zucchini and squash into bite size pieces.

  2. Toss with extra virgin olive oil, kosher salt, rosemary, balsamic vinegar and freshly ground black pepper. Spread them single layered either on a cookie sheet or large dish.

  3. Roast until squash and zucchini turn soft and lightly caramelized about 40 minutes in the oven.

  4. Remove from oven, toss with 1 teaspoon of balsamic vinegar, freshly ground black pepper and kosher salt. Serve hot.
