Preparing the vegetables for this gratin goes quickly if you have a mandoline for slicing them thinly and evently. If not, rest assured that your extra effort will be forgotten once you slice into this tender, tasty medley of baked fall vegetables.

Recipe Ingredients for Root Vegetable & Squash Gratin

26 oz sweet potatoes, peeled and sliced lengthwise 1/8" thick
16 oz butternut squash, peeled and sliced lengthwise 1/8 inch thick
1 medium rutabaga, peeled and halved lengthwise
1/2 tsp Kosher salt
1/2 tsp fresh ground pepper
1/2 cup low-sodium chicken broth
1/4 cup heavy cream
1/3 cup freshly grated Parmesan cheese

Recipe Directions for Root Vegetable & Squash Gratin

  1. preheat oven to 375

  2. spray an 8 x 12 inch b aking dish with cooking spray

  3. arrange half of the sweet potatotes in the dish, overlapping them slightly. Season with salt and pepper.

  4. Top with half of the rutabaga and the squash, seasoning each layer.

  5. Repeat layering.

  6. Pour the broth over and around the vegetables.

  7. Cover tightly with foil and bake for one hour, until the vegetables are almost tender when pierced. Remove the foil and pour the cream over the gratin. Bake for about 30 minutes longer, until the liquid has thickened.

  8. Sprinkle with grated Parmesan and bake five minutes longer, or until golden, rotating for even browning. Let the gratin stand for 10 minutes, then serve.
