easy vegetarian shepherd's pie. use any root vegetables yo have on hand. adjust spices to taste (i estimated how much i used)

Recipe Ingredients for Root vegetable shepherd's pie

4 idaho potatoes
1/2 cup half and half
2 tbsp unsalted butter
1 onion
1 carrot
1 sweet potato
1 tsp kosher salt
1 tsp black pepper
2 tbsp olive oil
1 tbsp unsalted butter
1/2 tsp cumin
1/2 tsp red pepper flakes
1 tsp garlic powder
4 tbsp parmesan cheese

Recipe Directions for Root vegetable shepherd's pie

  1. wash and cut potatoes into quarters. boil with salt until done.

  2. meanwhile, dice onion, carrot, and sweet potato(without skin), cook in oil and butter in skillet over medium heat until carrot and sweet potato soft and the onion is golden, about 15 minutes. add salt, cumin, red pepper flakes, and garlic powder. add about 1/4-1/3 cup water to thin and make a sauce.

  3. mash the potatoes with butter and half and half. add salt and pepper to taste.

  4. pour vegetable mixture into a small baking dish (mine was about 12 in long and 6 in wide). scoop potatoes over the top. spread with a spoon.

  5. grate cheese over top.

  6. bake on 500 degrees until golden brown on top and bubbling.

  7. enjoy!
