Recipe Ingredients for Root Vegetable Hash

2 tsp dried marjoram
2 tsp dried oregano
1/2 tsp dried thyme
1 1/2 tsp salt
1/2 tsp ground black pepper
3 tbsp olive oil
2 1/2 c chopped onions
4 garlic cloves, minced
2 c carrots, cut into 1/2-inch dice
2 c sweet potatoes, peeled and cut into 1/2-inch dice
2 c beets, peeled and cut into 1/2-inch dice
2 c rutabaga, peeled and cut into 1/2-inch dice
3 tbsp water

Recipe Directions for Root Vegetable Hash

  1. Stir together all of the seasoning ingredients in a small bowl and set aside.

  2. Warm the oil in a large skillet on medium-high heat. Cook the onions and garlic for about 5 minutes. Add all of the vegetables and stir well. Sprinkle with the seasoning mixture and water and stir well. Reduce the heat to medium-low, cover, and cook, stirring every 10 minutes or so, until the vegetables are tender, 30-45 minutes.
