Recipe Ingredients for Roo's Fancy Breakfast Burritos

6 eggs Egg, Scrambled
1 cup, shredded Cheddar Cheese
3 oz Peppers, Sweet, Red
4 oz Onions
1 serving Extra Virgin Olive Oil
2 fl oz Milk, Buttermilk, Fluid, Cultured, Lowfat
1 dash Pepper, Black
1/4 tsp Sea Salt
4 tortilla Tortillas
4 oz Tomato Roma
4 slices Premium Regular Smoked Bacon

Recipe Directions for Roo's Fancy Breakfast Burritos

On a baking sheet, bake bacon in toaster oven until crispy - 25 min. @ 350*; drain and set aside. Scramble eggs, buttermilk and S&P - add cheese; set aside. In a skillet, heat EVOO on Med/Hi - saute onions & peppers until glossy; set aside. Dice tomatoes, green onions & cilantro for garnish. Pour eggs into skillet (same one used for onions & peppers); stirring often for a soft cook; when done, turn off heat. Heat a flat skillet to warm up tortillas. To assemble: heat a tortilla (one at a time), then fill it with eggs, crumbled bacon, cooked veggies and then garnish with raw, diced veggies.
