Another elk burger, eggplant recipe. No egg, I forgot.

Recipe Ingredients for Ron's Elk, eggplant #2 March 6th, 2010

7 1/8 oz steak
9 oz tomato
5 oz eggplant
1 oz Parmesan
2 1/2 oz oats
3 1/2 oz celery
3 3/4 oz red bell pepper
5/8 oz coconut oil
3 3/4 oz summer squash
1 c water
1 T herbs

Recipe Directions for Ron's Elk, eggplant #2 March 6th, 2010

  1. Melt coconut oil, add elk burger, cook and set aside. Slice eggplant 1/2 " and place on hot skillet, add water, cover and steam until tender.

  2. Cut all veggies and set aside with the Parmesan cheese. Weight the oats.

  3. Oil a lasagna dish.

  4. Begin by layering the eggplant and meat first. Complete two layers.

  5. Bake at 350 for 45 minutes until bubbly.
