Roni's Vegetarian Chili Recipe

This recipe was taken from www.greenlitebites.com. I did make a few modifications to fit my taste. Serving size is 1 cup. This is excellent served over spaghetti squash (3/4 cup). You will never know there is pumpkin in it.

Recipe Ingredients for Roni's Vegetarian Chili

15 ounce black beans (one can)
15 ounce red kidney beans (one can)
15 ounce pinto beans (one can)
2 1/2 cup fat free chicken broth
15 ounce pumpkin (one can)
45 ounce diced tomatoes (three cans; one w/chilies)
1 tbsp chili powder
1 tbsp cumin
1 onion, chopped
2 green peppers
1 medium zucchini, chopped

Recipe Directions for Roni's Vegetarian Chili

  1. Add beans, broth, pumpkin, diced tomatoes and spices. Bring to boil and lower to simmer.

  2. While simmering, line a large cookie sheet with foil sprayed with non-stick spray. Put the cut up veggies on it. Sprinkle with salt, pepper, chili powder, and cumin. Roast in 425 degree oven for 25 minutes.

  3. Add the roasted veggies to the simmering beans. Cover and simmer one hour.

  4. Serve alone or over 3/4 cup of spaghetti squash. YUM!
