Recipe Ingredients for Ronda's Healthy Banana Muffins

3 cups flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
6 medium bananas, mashed
1 1/2 cups sugar
2 eggs
1/3 cup butter, melted
3/4 cup flaxseed, ground to make 1 cup

Recipe Directions for Ronda's Healthy Banana Muffins

  1. Preaheat oven to 350º F. Coat muffin pans with non-stick spray or use paper liners.

  2. Sift together the flour, baking powder, baking soda and salt. Set aside

  3. In a large bowl, combine bananas, sugar, egg and melted butter. Add flour mixture and beat until smooth. Scoop into muffin pans.

  4. Bake in preheated oven. Bake mini muffins for 10 to 15 minutes; bake large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped and will be golden brown in color.
