Romanesco Sauce Recipe

Nice sauce over pasta or for dipping bread

Recipe Ingredients for Romanesco sauce

1/2 T olive oil
1/2 cup almonds, chopped
4 garlic cloves, chopped
1/2 teaspoon salt
1 1/2 c tomatoes
1 1/2 red bell peppers, roasted and peeled
3 tbsp balsamic vinegar
1/2 T olive oil

Recipe Directions for Romanesco sauce

  1. Blacken the skins of peppers in broiler. Let cool, then peel roasted peppers.

  2. Put 1/2 T oil is iron skillet, add chopped almonds and garlic and toast till fragrant and a little golden.

  3. Put all in food processor.

  4. After processing put back in skillet and simmer for 10-15 minutes on low heat.

  5. After it cools down add 1/2 T good tasting olive oil and stir.

  6. Serve warmed up or at room temperature, with pasta or bread.
