Romaine & Citrus Salad with dried cranberries

Recipe Ingredients for Romaine & Citrus Salad

4 ounces Romaine lettuce
1 kiwi fruit
1/2 orange
1 ounce dried cranberries
1 ounce red onion
1 ounce crumbled blue cheese

Recipe Directions for Romaine & Citrus Salad

Wash Romaine ahead of time and chill to crisp; tear into bit-sized pieces. Peel and slice kiwi; peel and section orange, removing any tough membrane. Slice onion; mix all ingredients and toss well. Serve with low calorie raspberry viniagrette dressing. You can save 100 calories by omitting the bleu cheese.
