Rolled Shrimp Tacos Recipe

Modified from Closet Cooking to eliminate the frying. They are no longer crispy, but still delicious and each taco is only 3 points+

Recipe Ingredients for Rolled Shrimp Tacos

1 tablespoon olive oil
1/2 sweet onion, diced
2 cloves garlic, chopped
2 jalapeno peppers, finely diced
1 teaspoon cumin, toasted and ground
2 medium tomatoes, diced
1 pound shrimp, peeled, deviened and cut into 1/2 inch pieces
1 salt and pepper to taste
2 tbsp chopped cilantro
12 corn tortillas
1 cooking spray

Recipe Directions for Rolled Shrimp Tacos

  1. Preheat oven to 350 degrees.

  2. Heat the oil in a pan over medium heat. Add the onions and saute until tender, about 5-7 minutes Add the garlic, jalapenos and cumin and saute until fragrant, about a minute. Add the tomatoes and simmer until the sauce thickens, about 2-3 minutes. Add the shrimp and cook for a minute. Remove from heat, season with salt and mix in the cilantro.

  3. Place tortillas on a plate in between layers of wet paper towels. Microwave for 90 - 120 seconds to soften tortillas.

  4. Lightly spray cooking spray onto a foil lined cookie sheet.

  5. Place 3 tablespoons of the shrimp mixture on each tortilla, tightly roll it up and place seam side down onto the prepared cookie sheet, repeating for each tortilla until cookie sheet is full or all tortillas are used.

  6. Spray tops of tacos lightly with cooking spray and place in the preheated oven. Bake for 15 - 20 minutes, or until edges are crispy and lightly browned.

  7. makes 12 tacos.
