Reducing the amount of ricotta and mozzarella and using 1% milk and eggbeaters instead of cream and eggs -- reduces calories, cholesterol, and fat.

Recipe Ingredients for Rolled Eggplant

1/2 tablespoon olive oil
1 tablespoon minced garlic
1/2 cup diced onion
28 ounce crushed tomatoes in puree
10 ounce tomato sauce
2 tablespoons Italian seasoning
1/2 tablespoon crushed red pepper
1 teaspoon ground black pepper
1 1/2 cups italian bread crumbs
3/4 cup all-purpose flour
1/2 cup egg beaters
1/4 cup 1% milk
2 large eggplant, peeled and sliced lengthwise into 1/4 inch slices
1/2 tablespoon olive oil
1 1/2 cups spinach
10 oz low-fat ricotta cheese
1 cup shredded part-skim mozzarella cheese
1/2 cup grated Parmesan cheese

Recipe Directions for Rolled Eggplant

  1. Heat 1/2 tablespoon olive oil in a skillet over medium heat

  2. Add garlic and onion and saute for 5 minutes before adding crushed tomatoes, tomato sauce and remaining seasonings

  3. Simmer (covered) over medium-low heat for 30 minutes, stirring occasionally

  4. Remove from heat and set aside

  5. Mix together the bread crumbs and flour in a shallow dish. In a separate dish, whisk together eggbeaters and milk

  6. Heat 1/2 tablespoon olive oil in a large skillet over medium-high heat

  7. Dip each eggplant slice into the egg mixture, then coat with breadcrumbs

  8. Fry each slice of eggplant until golden brown, then place on paper towels to soak up excess oil

  9. Spread a thin layer of sauce in the bottom of a 9x13 inch baking dish

  10. Mix together spinach, ricotta cheese, mozzarella, and Parmesan cheese

  11. Spread 2 or so tablespoons of the cheese mixture onto one side of each slice of eggplant

  12. Roll up each slice, then place in the baking dish with the seam side down

  13. Spoon the remaining tomato sauce over the rolls before covering with aluminum foil and baking for 30-40 minutes at 400 degrees
