Roesti is a popular Swiss dish. This version is very slightly jazzed up - just a minor note - with cheese and onion. Swiss cheese, naturally. There are many variations on roesti, with nuts, meats, herbs, or vegetables. You can use any potato, but firmer varieties like yellow and gold are better. Sweet potato makes an interesting, if non-authentic, roesti. Roesti is distinguished from latkes which use egg as a binder, from potato pancakes which use more finely shredded potatoes, and from hash browns which are typically fried in more and deeper oil.

Recipe Ingredients for Roesti, Simple Version With Cheese And Onion

2 medium potatoes
1/2 onion
2 oz swiss cheese
2 oz butter
1 oz olive oil

Recipe Directions for Roesti, Simple Version With Cheese And Onion

  1. Use 2 medium russet potatoes or equivalent amount of yellow potatoes.

  2. Part cook potatoes, either boiling or microwave. Potatoes should still be firm.

  3. Julienne potatoes in 1/8" strips with mandolin or by hand. Alternatively, grate potatoes with coarse grater or equivalent food processor shredding disc.

  4. Finely chop onion. Alternatively, shred with food processor disc.

  5. Grate cheese. Alternatively, shred with processor.

  6. Remove excess water from potatoes and onion by wrapping and twisting in tea towel, or spreading in thin layer and repeatedly pressing hard with paper towels.

  7. Mix potatoes, onion, cheese and olive oil in large bowl. Add salt and pepper to taste.

  8. Heat frying pan, crepe pan or similar broad, low-sided pan, or griddle at medium-low heat. Melt 1 pat butter, spread over pan.

  9. Add potato-onion-cheese mix to pan, form into pancake less than 1/2" thick. Fry until underside is golden brown, checking after 4 minutes. Shake pan and use spatula to unstick roesti from pan, if needed.

  10. Place dish upside down on the pan. Holding dish to pan, turn pan upside, roesti will fall to dish with browned side up.

  11. Melt a pat of butter in pan, slide roesti into pan, and repeat frying.

  12. Slide roesti from pan to serving dish, cut into sections.

  13. Notes:

  14. The ideal pan is a non-stick crepe pan, inexpensive aluminium ones are usually about $20.

  15. After forming the pancake, do not try to immediately unstick roesti from pan. After the roesti browns, it will unstick naturally. If sticking remains a problem, use less heat, more butter, or a non-stick pan.

  16. Roesti can also be made without par cooking the potatoes. The texture and color is a little different.
