Basic rocky road fudge recipe with crunchy fiber cereal replacing nuts.

Recipe Ingredients for Rocky Road Fudge with Fiber

18 oz. dark chocolate, 70%, Callebaut, chopped
14 oz sweetened condensed milk
4 oz fat free evaporated milk
1 tblsp vanilla
8 3/4 oz marshmallows, miniature (=5 cups)
3 cups Bran Buds
2 1/2 cups Fiber One cereal

Recipe Directions for Rocky Road Fudge with Fiber

  1. Melt and stir together chocolate, condensed milk, and evaporated milk in a double boiler.

  2. Add cereals and vanilla and stir.

  3. Add marshmallows and stir together.

  4. Spread into a 13 x 9 pan lined with parchment. Cool at room temperature overnight.

  5. Note: For dark chocolate lovers. You could substitute semi-sweet (50% cocoa) or milk chocolate, but that would change the nutritional analysis.

  6. Note: Any combination of bran cereal will work. I just happened to have these amounts on hand.

  7. Note: I've sprinkled a little sea salt on top of the fudge before it has set. I call it "Rocky Icy Road Fudge," because we spread salt over icy roads here in the Midwest.

  8. Note: 2 squares (1/24 of pan) = 7 points plus.
