Rocky Road topping on fudge brownie base

Recipe Ingredients for Rocky Road Brownie

115 g butter
200 g white sugar
2 eggs
5 ml vanilla extract
30 g unsweetened cocoa powder
60 g all-purpose flour
2 g salt
1 g baking powder
1/2 cup chopped walnuts
250 g marshmallows
50 g shredded coconut
200 g dark chocolate

Recipe Directions for Rocky Road Brownie

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Grease and flour an 8 inch square pan.

  3. In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla.

  4. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.Stir in nuts and cherries.

  5. Bake in preheated oven for 25 to 30 minutes. Do not overcook.

  6. To make the topping, combine the marshmallows, peanuts and coconut in a bowl. Place the dark chocolate in a heatproof bowl over a saucepan half-filled with simmering water (make sure the bowl doesn't touch the water). Use a metal spoon to stir until the chocolate melts and is smooth.

  7. Add the dark chocolate to the marshmallow mixture and stir until well combined. Press firmly over the brownie. Place in the fridge for 1 hour or until firm. Cut into slices to serve.
