Recipe from Looney Spoons Cookbook. Veg. broth should be low sodium. Tomatoes and chick peas should be no salt added. All spices are 1 tsp. Drain and rinse chick peas. Tomatoes should be drained.. Sweet potatoes should be cut in cubes.

Recipe Ingredients for Rockin Moroccan Stew

2 1tsp Olive Oil
1 cup, chopped Onions
0.5 cup, diced Celery
0.5 cup, chopped Peppers, Sweet, Green
1 tsp Garlic
2 tsp Ginger Root
1 tsp Curry Powder
1 tsp Coriander Seed
1.8 grams Ground Cumin Spice
1 tsp Chili Powder
3 cup Organic Vegetable Broth
19 oz Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
19 oz Diced Tomatoes, No Salt Added
1 fl oz Lemon Juice
0.25 tsp Pepper, Black
0.25 cup (not packed) Raisins, Seedless
2 serving Kraft Light Peanut butter

Recipe Directions for Rockin Moroccan Stew

  1. HEat olive oil, add celery peppers and onions, cook for 3 minutes.

  2. Add garlic, ginger and spices, cook for 30 seconds.

  3. Add remaining ingredients except raisins, peanut butter and cilantro.

  4. Bring to boil, reduce heat and simmer, covered for 20 minutes.

  5. Stir in raisins, peanut butter and cilantro, simmer for 5 minutes.

  6. Stir well and serve hot.
