A great tasting, light alternative to classic clam chowder

Recipe Ingredients for Rocco's Now Eat This New England Clam Chowder

1 medium yellow onion, diced
4 garlic cloves, chopped
4 cups cauliflower florets
1 1/2 cups 1% milk
19 1/2 oz chopped clams
1 1/2 cups clam juice
2 tbsp cornstarch
6 tbsp Real Bacon Bits
7 oz yogurt, greek
2 tbsp chives, chopped
1 tbsp salt
1 tbsp pepper

Recipe Directions for Rocco's Now Eat This New England Clam Chowder

  1. In a large dutch oven, combine the onion, garlic, cauliflower & milk. Bring mix to a boil over high heat, then reduce heat to low, cover and simmer until veggies are tender, about 7 minutes.

  2. Strain the clams, reserving the juice.

  3. In a medium bowl, whisk the clam juice into the cornstarch

  4. Raise the heat under the dutch oven to med, & whisk the cornstarch mix into the soup. Bring the soup to a boil, whisking constantly. Then reduce the heat and simmer until the soup has thickened, about 2 min.

  5. Add the clams & bacon bits to the soup, then remove from heat. Whisk in the yogurt & chives. Season with the salt & pepper.

  6. Return to low heat to remain heated.
