Healthy Alfredo from Runner's World's "Athlete's Palate"

Recipe Ingredients for Rocco's Fettuccine Alfredo

8 oz whole wheat pasta
1 tbsp butter
3 cloves garlic, minced
2 tsp cornstarch
3/4 c chicken or vegetable broth
3/4 c parmesan cheese, grated
3/4 c lowfat yogurt
1/8 tsp nutmeg

Recipe Directions for Rocco's Fettuccine Alfredo

  1. cook pasta

  2. melt butter over medium heat, then cook garlic for a few minutes

  3. combine corn starch and nutmeg in a small bowl and whisk in broth until smooth

  4. Pour into saute pan, raise heat and bring to a simmer

  5. whisk in 1/2 c cheese until melted

  6. remove from heat and whisk in yogurt

  7. Toss with pasta and season with salt and pepper
