Recipe Ingredients for Robyn's Minestrone Soup

2 tbsp olive oil
2 cups onion, diced
3 cloves garlic, minced
2 stalks celery, diced
2 large carrots, diced
2 tsp dried basil
2 tsp dried oregano
1 tsp salt
1/2 tsp pepper
1/2 cup red bell pepper, diced
1/2 cup yellow bell pepper, diced
1/4 cup zucchini, diced
1/4 cup yellow squash, diced
4 cups tomato puree
4 cups low sodium chicken broth
4 cups water
14 oz kidney beans
14 oz navy beans
1/2 cup cooked jasmine rice

Recipe Directions for Robyn's Minestrone Soup

  1. heat olive oil in heavy stockpot. Add onion and garlic and cooked over low heat until softened. Add celery, carrots, and spices, cover, and cook 10 mins more.

  2. Add diced vegetables, tomato puree, chicken broth, and water. Stir, bring up to a simmer, and cook 15 mins, stirring occasionally. Rinse beans, add to soup, and cook 5 mins more. Add cooked rice and continue to simmer until all ingredients are heated through. If soup thickens, add additional water.
