Pan fried paprika chicken on a bed of cougette, leek and onion with tomatoes (All ingredients are cooked before going in oven, so could serve at this point. I ad the oven stage to make sure all ingredients are nice and hot.) Serving suggestion, good with rice, pasta, crusty bread)

Recipe Ingredients for Rob's Paprika chicken and veg with tomatoes

670 grams turkey breast
1 medium leek
1/2 onion
400 grams chopped tomatoes
1 courgette
10 cherry tomatoes
5 tbls olive oil
1 tbls paprika

Recipe Directions for Rob's Paprika chicken and veg with tomatoes

  1. Set oven temperature to 180 degrees C.

  2. Add 1 tbls of olive oil to frying pan and lightly fry the leeks, onoin and corgette till soft

  3. Once cooked transfer the leeks, onions and corgettes to the bottom of a shallow oven proof dish, forming a layer across the bottom.

  4. Add 1 tbls olive oil and pan fry the turkey fillets till cooked through, transfer to the ovenproof dish, arrange the fillets in down the centre of the dish.

  5. Scatter the cherry tomatoes down the sides of the fillets.

  6. Heat the chopped tomatoes in a pan add herbs and paprika mix well then pour over the turkey fillets.

  7. season with salt and pepper,

  8. Place in oven for 20 minutes

  9. Serve.
