Quick easy to make soup to make you eat your veggies. Chicken is there for protein. Take it out if your vegetarian. Force yourself to eat the entire recipe for lunch. Doesn't seem like it would be hard to do when you look at the ingredient list, but it may take you all afternoon. Will stave off hunger for a LONG time if you can do it. Filling, yet low calorie. Great for weight loss. There's a lot of salt, but I think this is a good trade-off for no boullion cubes/powder. If you like, add less salt. Has 5 servings of veggies according to Canada Food Guide. Recipe multiplies easily.

Recipe Ingredients for Rob's Chicken Vegetable Soup

1 carrot, diced
1 celery stalk, diced
1 small potato, diced
1 medium onion, diced
3 cups water
1/2 cup cooked chicken, chopped
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dill weed
1/2 cup frozen peas

Recipe Directions for Rob's Chicken Vegetable Soup

  1. put first 4 ingredients in pot with water (about 3 cups). Add chicken, salt, pepper and dill weed. Bring to a boil and simmer for 20 minutes.

  2. Add frozen peas and boil 3 minutes more.
