This is an easy to make, nutritious vegetarian/vegan soup. It has plenty of protein, vitamin A, vitamin C and iron in it. For a lower sodium content, omit the sea salt and/or use low sodium canned crushed tomatoes.

Recipe Ingredients for Robin's Homemade Vegetarian Veggie & Lentil Soup

1/2 cup lentils
2 medium zuchinni, sliced
3 large carrots, sliced
2 cups frozen green beans
1/2 cup edamame
3/4 cup swiss chard
1/2 medium onion, chopped
28 ounce crushed tomatoes
1 tsp. ground black pepper
1 tsp. sea salt

Recipe Directions for Robin's Homemade Vegetarian Veggie & Lentil Soup

  1. Spray the bottom of a soup pot with a little bit of Pam (or other) cooking spray.

  2. Cook the chopped onion over medium heat for approximately 3-5 minutes or until translucent.

  3. Add all of the vegetables, crushed tomatoes, black pepper, and sea salt to the pot.

  4. Add 4 cups water to the pot.

  5. Add the lentils to the pot.

  6. Bring to a boil, then lower heat to simmer.

  7. Simmer for approximately 20 minutes, or until the lentils are soft.

  8. Note: For more flavor, substitute 1 cube Knorr (brand) Veggie Boullion for the sea salt.
