Fantastic hearty vegetarian soup.

Recipe Ingredients for Robin's Curry Lentil Soup

7 cups water
6 tsp bouillon
1 cup green onions, diced
2 small carrots, chopped
2 small red potatoes, diced
3/4 cup barley
1 tbsp ground ginger
1 tsp cardamom
1 tsp curry powder
1 tsp cumin
1/4 cup cilantro

Recipe Directions for Robin's Curry Lentil Soup

  1. Use "Better than bouillon" vegetarian product for the 6 tsp of bouillon.

  2. Add water to a large soup pot and add the bouillon.

  3. Chop the green onions, carrots, and red potatoes and add to the pot.

  4. Add barley, ginger, cardamom, curry powder, and cumin.

  5. Bring the mixture to a boil, then reduce heat and simmer for 1/2 hour.

  6. Chop cilantro and add just before serving.
