This yummy sauce cooks all day in the crockpot. Has some prep work in the begining but is well worth it and makes a ton. Blend to make saucy or leave it chunky.

Recipe Ingredients for Robins Chunky Veggie Spaghetti Sauce

31 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
6 serving V8 100% Vegatable Juice
2 cup, diced Mushrooms, Portabella
1 cup Dried Mushrooms
8 stalk, medium (7-1/2" - 8" long) Celery
2 cup chopped raw Yellow Zucchini
2 medium Green Zucchini
3/4 cup, chopped Onions
10 tbsp Tomato Paste
1 tbsp, crumbled Bay Leaf

Recipe Directions for Robins Chunky Veggie Spaghetti Sauce

cut x's into tomatoes and roast them for bout 30 minutes. Allow to cool enough that you can touch them, and remove the skins. While tomatoes are cooking cut up all veggies into an even dice, size dependant upon how chunky you want your sauce. Put everything into the crockpot and cook on high 5-6 hours. Makes 14, 1 cup portions which are very hearty.
